Soft bake cookie

Ok here it goes.. I started baking these soft baked cookies because my boyfriend ‘requested’ for it (hinted in a rather obvious way). Thus the first thing i thought of was going to Pinterest, where i could get hold of many amazing soft baked cookies recipes. When i saw the picture of this ‘the best soft chocolate chip cookies’ , i knew straight away that this is the recipe that i am looking for (it seriously looks so good), you can check it out at Pinch Of Yum. I *clicked* and ta dah! There goes an afternoon of baking.

I followed her recipe step by step and it indeed tasted so good! Couldn’t have found a better recipe. Thus here i am, going to share her recipe with you guys and girls. I added some oats and speculoos cookie butter (because it is expiring and i really didn’t want to waste it), and i did a rough conversion of the quantities used. The recipe may have some changes here and there (because i couldn’t find some ingredients from my local store) but i think it will taste as good as the original recipe! *fingers crossed*

Ingredients:

110g unsalted butter

250g of plain flour

50g brown sugar

100g white sugar

1 egg

1/2 teaspoon of baking soda

1/2 teaspoon of salt

3 tablespoon of oats

as much chocolate chips as you want

speculoos cookie butter

Recipe:

First, preheat the oven. I set it to 250 degree for around 10 mins. Next, as the oven is heating up, i went to melt the butter and put it aside to cool down. Then proceed to mix the cooled melted butter with the brown and white sugar. Using a mixer, mix it till they are blended.

Next, add in the egg. Again, mix them up until they are blended. As the original recipe suggested that we should not mix it for too long, i stopped once they are blended.

Proceed to add in the flour, salt and baking soda. Blend them until they are stiff and starts to crumble. Your dough should not be too wet or too dry. Mine looks like this.

Proceed to knelt it with your hands when it is too stiff for the mixer. Once you think they are well blended, add in the oats and chocolate chips(you can add in as much as you desire) and continue mixing them.

Ta dah! And you are almost done. Next, i roll them up into tiny balls and added 1/4 teaspoon of speculoos cookie butter into the center of each tiny balls.

And it is ready for the oven! I set mine at 250 degrees for 10-12 minutes (I’m using Tefal). But depending on the strength of your oven, you may set it at different timing and different temperature. So do test out a small batch before baking them all at one go.

DO NOT overbaked them!! Do use a toothpick or chopstick to check the middle of the cookie to check on the doneness. As long as the your toothpick or chopstick is clear (no residue or wet dough sticking on) after pulling out of the cookie, it should be almost done.

But nonetheless, it still taste awesome! Adding in oats makes me feel less guilty when i am indulging it (as least it is somewhat nutritious!). I can’t wait to try out more recipes from Pinch of Yum.

Brownie with a healthy twist!

Just imagine having a scoop of vanilla ice cream on top of your warm and gooey brownie. Sounds awesome? Thats what you will be getting after reading this post! I will be sharing my recipe of this sinful brownie but with a healthy twist (so i don’t feel so guilty indulging in this gooey goodness). Oh well, although this may not be the healthiest option but since i have a major sweet tooth, i would like to have a occasional dessert to go with my meal. And hey, its all about moderation right? 🙂

Alright, it all starts with melting the butter and chocolate in a bowl.

Next, add flour, sugar, baking powder and chia seeds (they are high in fiber, protein and antioxidant!) into another bowl, and proceed to stir in the eggs.

Lastly, mix the chocolate mixture into the flour mixture. Mix well and put it into the oven for 30mins at 180 Degrees Celsius.

And ta dah! There you have it, a rich and gooey brownie for dessert tonight, and don’t forget that it also contains chia seeds which is super good for health. Hopefully this will make you feel  less guilty consuming it. I don’t know about you, but it definitely works for me!

250g unsalted butter

86g flour

1tsp baking powder

200g dark chocolate

300g caster sugar

4 eggs

3 tbsp chia seeds
